Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice flour
Thickens the milk mixture so the filling sets smoothly rather than staying thin.
Eggs
Set when baked, giving the filling body and structure.
Milk
Forms the creamy base of the filling and carries the other flavors.
Madeira wine
Adds a rich, aromatic flavor to the filling.

The step that matters

Pour the mixture into the boiling milk. Rice flour must be suspended in cold milk first so it does not clump. Adding the mixture to boiling milk while stirring lets the starch gelatinize evenly and thicken the custard without lumps.
