Coffee Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, combine cold coffee and sour cream.

  3. Add brown sugar and mix well.

  4. Beat in the eggs one at a time.

  5. Stir in currants, raisins, cloves, allspice, cinnamon, and nutmeg.

  6. Dissolve baking soda in a small amount of water and add to the mixture.

  7. Gradually add flour until the batter is stiff.

Bake

  1. Pour the batter into a greased baking pan and bake for about 30‑40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Baking soda
Reacts with the acidic sour cream and coffee to lift the batter as it bakes.
Brown sugar
Adds sweetness, moisture, and a molasses-like depth of flavour.
Sour cream
Adds moisture and tang, and its acidity activates the baking soda.
Flour
Provides the structure that holds the stiff batter and the fruit together.

The step that matters

Bake until a toothpick comes out clean. A dense, fruit-filled batter can look set on top while the centre is still wet. Testing the middle with a toothpick confirms the crumb has fully set before cooling.

Swap the currant

How well each one fits the dish's main ingredients (coffee, cream, sugar, egg, raisin, clove, allspice):

  1. Vanillafits better
  2. Figfits better
  3. Orangefits better
  4. Currantthe original

Fit is the average pairing score against coffee, cream, sugar, egg, raisin, clove, allspice. Candidates are from the same food group and used in at least 100 recipes.
