What each ingredient does

Watermelon rind
Provides the main body and bite of the pickle once cured and simmered.
Coarse sea salt
Draws water out of the rind, firming its texture for pickling.
Vinegar
Acidity that preserves the rind and gives the pickle its sharp tang.
Sugar
Adds sweetness that balances the sharpness of the vinegar.
