Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the lemon liquid into a smooth, custard-like texture as it heats.
Egg yolks
Enrich the mixture and help it thicken into a custard as they cook.
Egg whites
Whipped and folded in, they add a light, airy texture.
Sugar
Sweetens the lemon juice and balances its acidity.
Lemon
Provides the tart citrus flavour and acidity.

The step that matters

Cook until it thickens like custard. Starch needs to reach a boil to swell and thicken fully, and egg yolks thicken as they heat. Undercooking leaves the mixture thin, while overheating can scramble the yolks.
