Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Melt the molasses and shortening in a saucepan over low heat.

  2. Mix the baking soda with the boiling water and add it to the melted mixture.

  3. Stir in the vinegar.

  4. Combine the ginger, cinnamon, and salt with the flour, then gradually mix it into the wet ingredients.

Bake

  1. Pour the batter into a greased flat baking pan.

  2. Bake at 350°F (175°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds sweetness, dark color, and moisture to the batter.
Flour
Provides structure once the batter sets in the oven.
Baking soda
Reacts with the vinegar and molasses to lift the batter and keep it soft.
Shortening (lard)
Adds fat that tenderizes the crumb and keeps it moist.
Vinegar
Acidic partner for the baking soda, helping the batter rise.

The step that matters

Mix the baking soda with the boiling water. Baking soda must be fully dissolved and combined with the acidic molasses and vinegar so it releases gas evenly. Adding it to cool or unmixed ingredients can leave pockets of soda and uneven rise.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, cinnamon, vinegar, flour):
