Plain Fruit Cake

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 300°F (150°C).

  2. Cream the butter and brown sugar together until light and fluffy.

  3. Add the egg yolks and mix well.

  4. Stir in the milk, raisins, currants, mixed peel, cinnamon, lemon extract, and grated nutmeg.

  5. Sift the flour and baking powder together, then gradually add to the mixture.

  6. In a separate bowl, beat the egg whites until stiff peaks form, then fold them into the batter.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for 3 to 4 hours, or until a toothpick inserted in the center comes out clean.

What each ingredient does

Eggs
Egg yolks enrich the batter, while whipped whites lighten it and add structure as the cake sets.
All-purpose flour
Provides the wheat proteins and starch that form the cake's structure as it bakes.
Unsalted butter
Creamed with the sugar to trap air, adding tenderness and richness to the crumb.
Brown sugar
Sweetens the cake, adds moisture, and creamed with butter helps create a tender texture.
Baking powder
Releases gas during baking, helping the cake rise and become light.
Raisins
Add chewy sweetness and moisture to the cake.

The step that matters

Folding in the egg whites. Whipped whites hold the air that lightens the batter. Folding gently, rather than stirring, keeps that air from collapsing, so the cake rises well and stays light.

Swap the currant

How well each one fits the dish's main ingredients (flour, butter, sugar, egg, milk, raisin, cinnamon):

  1. Vanillafits better
  2. Figfits better
  3. Applefits better
  4. Currantthe original

Fit is the average pairing score against flour, butter, sugar, egg, milk, raisin, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
