Lamb or Mutton Chops

Ingredients

Directions

  1. Trim off the skin and fat from the chops and scrape the bone bare for 1.5 to 2 inches.

  2. Flatten the chops using a rolling pin or the broad side of a hatchet.

  3. Broil the chops quickly on a greased grill, turning several times.

  4. Season with coarse sea salt and black pepper, and serve on a hot dish, overlapping the chops neatly.

  5. Optionally, serve with a mound of green peas or mashed potatoes, garnished with parsley or nasturtiums.
