Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. In a pan, combine the steamed pumpkin, eggs, sugar, molasses, rolled crackers, ginger, nutmeg, cinnamon, and salt.

  2. Stir well and add enough rich milk to thin the mixture.

Bake

  1. Pour the mixture into a pastry shell.

  2. Bake at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pumpkin
Forms the bulk of the filling and supplies the pie's body and flavour.
Eggs
Set during baking to give the filling its structure and firm custard texture.
Sugar
Sweetens the filling and adds to its browning as it bakes.
Molasses
Adds sweetness, depth and a darker colour to the filling.
Rolled crackers
Absorb liquid and help thicken the filling so it holds its shape.

The step that matters

Bake until set. Egg proteins coagulate as the custard heats, so the pie is done when the centre barely wobbles. Overbaking can cause cracking and a grainy texture.

Swap the pumpkin

Fit is the average pairing score against egg, sugar, molasses, ginger, nutmeg, cinnamon, milk. Candidates are from the same food group and used in at least 100 recipes.
