What each ingredient does

Gooseberries
Provide the fruit body and a tart, sharp flavour that the sugar balances.
Sugar
Sweetens the fruit and, as the syrup thickens, helps preserve it and give it body.
Vinegar
Adds acidity that brightens the sweetness and helps keep the preserve stable.
Ground cinnamon
Adds warm aroma and sweet spice flavour to the syrup.

The step that matters

Boiling the syrup with the spice bag. Sugar concentrates as water evaporates, so boiling for the full 30 to 40 minutes thickens the syrup quickly. Watch it closely, since over-boiling can make it too stiff or cause it to darken and taste bitter.

Swap the mace

How well each one fits the dish's main ingredients (sugar, vinegar, cinnamon, allspice, clove):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Gingerfits better
  4. Macethe original

Fit is the average pairing score against sugar, vinegar, cinnamon, allspice, clove. Candidates are from the same food group and used in at least 100 recipes.
