Christmas Pudding

Ingredients

Directions

Prepare the fruit and spices

  1. Seed the raisins and wash the currants.

  2. Cut the citron, orange, and lemon peel into thin slices.

  3. Blanch the almonds and cut them into thin strips.

  4. Mix the spices in a bowl and set aside.

Make the pudding mixture

  1. Beat the egg yolks with the sugar, then grate in the yellow part of one lemon peel.

  2. Gradually add the milk, chopped suet, and bread crumbs.

  3. Stir in the fruit and spices, then fold in the beaten egg whites.

Mold and boil

  1. Butter a tin mold or bowl and pack the pudding mixture tightly.

  2. If boiling in a bowl, tie a cloth around it; a mold usually has a cover.

  3. Ensure the water in the pot reaches the top of the pudding mold.

  4. Suspend the pudding in the water to prevent it from becoming water-soaked.

  5. Boil for 6 hours on the day it is made, then hang it in a cold cellar.

  6. On Christmas morning, return the pudding to the mold and boil for 2 more hours.

  7. Make the pudding 2 weeks before Christmas for best results.

What each ingredient does

Eggs
Egg yolks and whites bind the mixture and give it a light, set structure.
Bread crumbs
Absorb the milk and fat to give the pudding body and a moist, tender crumb.
Beef suet
Adds fat that keeps the pudding moist and rich as it cooks.
Raisins
Provide sweetness and chewy texture through the pudding.
Granulated sugar
Sweetens the mixture and helps the eggs form a stable base when beaten.
Milk
Moistens the bread crumbs and loosens the mixture into a pourable batter.

The step that matters

Suspend the pudding in the water. Keeping the mold off the bottom of the pot stops it from scorching and prevents the pudding from absorbing water and becoming soggy.
