Peach and Apricot Pie

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Line a pie plate with pie crust.

  2. Pare and slice the peaches and apricots, then lay them in the plate.

  3. Fill the pie well with the fruit.

  4. Cover with a piece of greased paper and bake at 400°F (200°C).

  5. Once done, add sugar to taste.

  6. Beat the egg whites until stiff, then mix in the powdered sugar.

  7. Spread the egg mixture on top and bake until it gets a little color.
