Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Suet
Adds fat that keeps the dumplings moist and tender as they cook.
Bread crumbs
Provide the bulk and body that hold the dumplings together.
Egg
Binds the mixture and helps it set firm when cooked.
Lemon zest
Adds aromatic citrus oils that flavour the dumplings.

The step that matters

Add enough milk or water to form a stiff paste. Too little liquid leaves the mixture crumbly, so it falls apart while boiling; too much makes it slack and sticky. A stiff paste holds its shape in the cloth.
