Why it works: Sorghum and flour share more aroma than cooks usually use. They rank in the top 5% of all ingredient pairs, and cooks put them together in 99 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ideal Ginger Snaps

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Boil the sorghum molasses for one minute.

  2. Remove from heat and dissolve the butter in it.

  3. Cool the mixture until lukewarm.

  4. Sift in the dry ingredients.

  5. Mix into a stiff dough.

Shape and bake

  1. Roll the dough on a floured board very thin.

  2. Cut into shapes.

  3. Bake in a moderate oven at 350°F (175°C).

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sorghum molasses
Provides the main sweetness, dark color and rich flavor of the snaps.
Butter
Adds fat for tenderness and flavor, and firms as the dough cools.
Flour
Forms the structure that holds the dough together and sets when baked.
Baking powder
Releases gas to lift the dough slightly and lighten its texture.
Ginger
Supplies the warm, spicy aroma that defines the snaps.

The step that matters

Roll the dough very thin. Thin dough dries out and crisps during baking, while thick dough stays soft and chewy. Uneven thickness also makes some pieces burn while others remain underdone.

Swap the ginger

How well each one fits the dish's main ingredients (sorghum, molasses, butter, flour, sugar):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerthe original
  4. Allspicefits about as well

Fit is the average pairing score against sorghum, molasses, butter, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
