Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Beat the eggs until light.

  2. Add the sorghum molasses and water to the eggs.

  3. Mix the flour, cinnamon, nutmeg, and salt together, then add to the egg mixture.

  4. Add the melted butter and beat everything together.

Bake

  1. Line a pie pan with flaky crust and flour the bottom.

  2. Pour the mixture into the crust.

  3. Bake in a hot oven at 400°F (200°C) for the first 8 to 10 minutes, then reduce the heat and continue baking until the mixture is set firmly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling into a firm custard as they cook and bind the mixture.
Sorghum molasses
Provides the sweet, deep flavour and dark colour of the filling.
Flour
Thickens the filling so it holds its shape when sliced.
Butter
Adds richness and fat, giving a smoother texture and mouthfeel.

The step that matters

Bake until set firmly. Eggs set as their proteins coagulate with heat. Pulling the pie too early leaves a runny filling, while overbaking can make it weep or crack, so check that it is firm before removing it.
