Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Make the batter

  1. Beat the egg whites until stiff, then add the sugar and continue beating.

  2. Stir the yolks with a wooden spoon and add to the mixture, beating again.

  3. Gently fold in the sifted flour (and rice) and add the lemon essence.

Bake

  1. Pour the mixture into a well-lined tin and bake immediately for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped by beating give the cake its lift and light, airy structure.
Flour
Sets during baking to give the cake its structure once the egg foam holds.
Powdered loaf sugar
Sweetens the cake and helps stabilise the whipped egg whites.

The step that matters

Folding in the flour. Folding gently keeps the air beaten into the egg whites. Stirring hard knocks that air out, so the sponge bakes up flat and dense instead of light.

Swap the lemon
