Ingredients

Directions

Prepare the enriched dough

  1. Save 2 or 3 lbs of light bread dough after placing the rest in pans.

  2. In a bowl, mix 5 or 6 eggs, ½ cup lard or butter, and ¾ cup brown sugar.

  3. Add flour to the mixture until it forms a stiff dough, similar to bread dough.

  4. Keep the dough warm and allow it to rise again until light.

Shape and bake

  1. Shape the dough into pieces the size of a hen's egg and make a hole in the center of each.

  2. Place the shaped dough in a pan and let them rise for an inch.

  3. Brush the tops with a beaten egg yolk mixed with sugar, then bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Light bread dough
Provides the yeasted base that gives the rusks their light, airy crumb.
Eggs
Add structure and richness, and the yolk gives the top a glossy golden browning.
Lard or butter
Adds fat that tenderises the crumb and carries flavour.
Brown sugar
Adds sweetness and moisture, and helps the crust brown when baked.

The step that matters

Letting the dough rise again until light. Yeast needs time and warmth to produce gas that lightens the enriched dough. Under-proofed dough bakes dense, while the fat and sugar slow rising, so the dough must be allowed to fully rise before shaping and baking.
