Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped stiff and folded in, they lighten the batter and give the pudding its airy structure.
Egg yolks
Add richness and help bind the batter as it sets in the oven.
Stale white bread
Soaked and drained, it adds body and moisture to the pudding.
Pecan nuts
Grated into the batter, they add nutty flavor and some richness.
Sugar
Adds sweetness and helps the pudding brown lightly as it bakes.

The step that matters

Folding in the egg whites. Stiffly beaten whites trap air that gives the pudding its lift. Folding gently keeps that air in; stirring vigorously deflates the foam and leaves a dense result.

Swap the nuts

How well each one fits the dish's main ingredients (butter, sugar, bread, egg):

  1. Pecansfits better
  2. Almondfits better
  3. Peasfits better
  4. Nutsthe original

Fit is the average pairing score against butter, sugar, bread, egg. Candidates are from the same food group and used in at least 100 recipes.
