Ingredients

Directions

Prepare the dough

  1. Save 2 to 3 lbs. of light bread dough after placing it in pans.

  2. Mix 5 to 6 eggs, ½ cup lard or butter, and ½ cup brown sugar.

  3. Add flour to make a dough as stiff as for bread.

  4. Keep the dough warm and let it rise again.

Shape and bake

  1. When light, shape into rusk the size of a hen's egg and stick a hole in the center of each.

  2. Place in a pan and let them rise an inch.

  3. Glaze the tops with a mixture of 1 beaten egg yolk and 1 tablespoon sugar.

  4. Bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Enrich the dough, adding structure and a tender crumb as they set.
Lard or butter
Adds fat, which tenderizes the crumb and gives a rich flavor.
Brown sugar
Adds sweetness and moisture, and helps the crust brown during baking.
Flour
Builds the gluten structure that gives the dough its stiff, bread-like body.
Egg yolk
Glaze that adds a glossy, deep golden color to the baked tops.

The step that matters

Let the dough rise fully before shaping and baking. Yeast needs time and warmth to build gas and lighten the dough. Shaping or baking before it is light leaves the rusks dense and heavy.
