Poast Pork with Peas

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Make a slice in the knuckle of the pork and fill it with sage, pepper, salt, and chopped onion.

  3. Score the skin in slices when the pork is half done, without cutting deeper than the outer rind.

  4. Cook until nearly done, then pour off excess fat.

  5. Add the hulled white peas and cook slowly until everything is fully cooked and browned.

  6. Serve with apple sauce.
