Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Sweetbreads with Pea Nests

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the sweetbreads

  1. Clean the sweetbreads.

  2. Cook the sweetbreads in salted, acidulated water with a bay leaf for 20 minutes.

  3. Blanch the sweetbreads in cold water.

  4. Let the sweetbreads stand under a weight until cold.

  5. Cut each sweetbread in half lengthwise.

Glaze the sweetbreads

  1. Sauté the sweetbread halves in 3 tablespoons of butter with 2 slices of onion and 6 slices of carrot.

  2. Pour off the butter.

  3. Add ¼ cup of rich brown stock.

  4. Cook the sweetbreads in the oven at 400°F (200°C) for about 20 minutes, basting often until well glazed.

Make the pea nests

  1. Pass 2 cans of drained peas through a sieve.

  2. Season the pea puree with salt, pepper, sugar, and butter.

  3. Let the pea puree simmer until dry.

  4. Shape the pea puree into nests on individual plates using a pastry bag.

  5. Arrange the sweetbreads in the pea nests.

Make the mushroom sauce

  1. Sauté 3 mushroom caps in butter for 5 minutes.

  2. Dredge the sautéed mushrooms with 1 tablespoon of flour.

  3. Moisten the mushrooms with 1 cup of cream and the gravy from the sweetbreads.

  4. Pour the mushroom mixture around the nests.

What each ingredient does

Sweetbreads
Tender, delicate meat that becomes richly browned and glazed when sautéed and roasted.
Butter
Carries browning and adds rich flavor when sautéing the sweetbreads, mushrooms, and pea puree.
Peas
Form the puree that shapes the nests, giving body and a fresh, sweet vegetable flavor.
Mushrooms
Add earthy flavor and browning to the sauce.
Flour
Thickens the mushroom mixture into a smooth, cohesive sauce.
Cream
Adds richness and moisture to the mushroom sauce.

The step that matters

Let the pea puree simmer until dry. Excess moisture makes the puree too loose to hold its shape in a pastry bag, so the nests can collapse. Simmering evaporates water and firms the puree enough to pipe cleanly.

Swap the peas

How well each one fits the dish's main ingredients (butter, onion, carrot, pepper, sugar, mushroom, flour):

  1. Chestnutfits better
  2. Beansfits better
  3. Sesamefits better
  4. Peasthe original

Fit is the average pairing score against butter, onion, carrot, pepper, sugar, mushroom, flour. Candidates are from the same food group and used in at least 100 recipes.
