Why it works: Gelatin and syrup match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 192 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Pineapple with Rice Cream
Ingredients
Directions
Scald the milk and cook with the beaten egg yolks and sugar until slightly thickened.
Soften the gelatin in cold water, then add to the mixture and strain.
When cool, mix in the chopped ginger, ginger syrup, and lemon juice.
In six small timbale molds, decorate the bottoms with angelica and cherries, then fill with rice.
Fill a plain mold with rice and cook in boiling water in the oven for 10-15 minutes.
Invert the timbales onto a serving dish alongside the plain mold.
