Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peas
Provide the main body and flavour of the soup once cooked and puréed.
Flour
Thickens the puréed peas into a smooth, body-rich soup when cooked in butter.
Butter
Carries the flour so it cooks smoothly, adding richness to the soup.
Milk
Adds creaminess and softens the flavour of the pea purée.

The step that matters

Cooking the flour and butter before thickening. Flour stirred into hot butter must be cooked and blended smoothly; if added raw or lumpy it will taste pasty and form lumps that do not dissolve into the purée.

Swap the peas

How well each one fits the dish's main ingredients (sugar, flour, butter, milk, onion, pepper):

  1. Almondfits better
  2. Chestnutfits better
  3. Milletfits better
  4. Peasthe original

Fit is the average pairing score against sugar, flour, butter, milk, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
