Split Peas Soup

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Rinse the split peas under cold water.

  2. In a large pot, combine the split peas and water. Bring to a boil.

  3. Reduce heat and simmer for about 1 hour, or until peas are tender.

  4. Add chopped onion, carrots, and celery. Cook for an additional 30 minutes.

  5. Season with salt and pepper to taste. If using, add diced ham or bacon.

  6. Serve hot.
