Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓
Marble Cake
Ingredients
Directions
For the white part, rub together 3 ounces and 6 ounces of sugar with 1 pound of flour.
Mix ½ cup of milk with ¼ ounce of cream of tartar, then add to the flour mixture.
Incorporate 4 beaten egg whites and ¼ ounce of baking soda dissolved in 1 teaspoon of water, and mix well.
For the dark part, combine 6 ounces of brown sugar, 1 pound of flour, and 6 ounces of treacle.
Add ½ teacup of milk mixed with ¼ ounce of cream of tartar and 5 egg yolks, then flavor with cinnamon, cloves, and lemon.
In a 12-inch square tin, layer the dark and white mixtures until 1 inch thick.
Cut into squares of 3 inches and then into thirds.
