Plum Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and brown sugar together.

  2. Beat the eggs until thick, then mix them into the butter and sugar mixture.

  3. Stir in the milk.

  4. Combine the spices with the flour and sift into the mixture, beating thoroughly.

Add the fruit and bake

  1. Prepare the raisins by seeding them and wash and dry the currants.

  2. Dust the fruit with flour, then add it along with the baking powder to the batter.

  3. Pour the batter into a greased pan and bake in a moderate oven at 350°F (175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creaming with sugar traps air and gives the cake a tender, rich crumb.
Eggs
Beaten eggs add structure and help bind the batter while adding richness.
Flour
Forms the main structure of the cake as its proteins set during baking.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Brown sugar
Adds sweetness and moisture, and helps the cake brown and stay tender.

The step that matters

Dust the fruit with flour before adding it. A light coating of flour helps the raisins and currants stay suspended in the batter rather than sinking to the bottom during baking.

Swap the currant

How well each one fits the dish's main ingredients (butter, sugar, egg, milk, flour, raisin, cinnamon):

  1. Vanillafits better
