What each ingredient does

Irish moss
Seaweed gelling agent that thickens the milk and sets it into a soft pudding as it cools.
Sweet milk
Forms the body of the pudding, and its proteins help give the set a creamy texture.

The step that matters

Straining through a fine sieve. Irish moss leaves small bits of weed and debris behind. Straining removes them so the pudding sets smooth and clear rather than gritty.

Flavor stand-ins for the cinnamon

How well each one fits the dish's main ingredients (tea, irish moss, milk, cream):

  1. Cinnamonthe original
  2. Nutmegabout as good a flavor fit

Fit is the average pairing score against tea, irish moss, milk, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
