What each ingredient does

Eggs
Yolks bind the batter and whites, folded in stiffly beaten, lighten the pudding as it steams.
Bread crumbs
Soak up the scalded milk and give the pudding a soft, tender body.
Suet
Creamed fat that adds richness and a moist, crumbly texture.
Sugar
Adds sweetness and helps the suet cream into a smooth base.
Brandy
Adds aroma and flavour and helps keep the pudding moist.
Raisins
Add chewy sweetness and bulk to the dense pudding.

The step that matters

Folding in the stiffly-beaten egg whites. Egg whites hold air that lightens the heavy fruit and suet mixture. Stirring them in vigorously knocks out that air, leaving a denser pudding, so fold gently until just combined.

Swap the currant

How well each one fits the dish's main ingredients (bread, sugar, egg, raisin, fig, milk, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Applefits better
