Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Add flour, eggs, milk, molasses, raisins, citron, grated nutmeg, cinnamon, and cloves, then mix well.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during cooking.
Butter
Adds richness and tenderness when creamed with the sugar.
Flour
Provides the structure that holds the cake together.
Molasses
Adds moisture, dark color and a deep sweetness.
Raisins
Add moisture and concentrated sweetness throughout the cake.

The step that matters

Steaming the cake for 3 hours. Steam must be kept steady and the pan sealed so the batter cooks through with moisture. Steaming gives a moist, dense crumb, and the short oven stage afterwards dries the surface.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, butter, flour, egg, milk, molasses, raisin):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against sugar, butter, flour, egg, milk, molasses, raisin. Candidates are from the same food group and used in at least 100 recipes.
