What each ingredient does

Plums
Provide the fruit that forms the body of the preserve.
Sugar
Sweetens the preserve and helps preserve the fruit.
Vinegar
Adds acidity that sharpens the flavour and balances the sweetness.
Cinnamon
Contributes warm aroma and spice flavour to the syrup.

The step that matters

Boil the juice down until it becomes rich. Reducing the juice concentrates its sugars and acids, so the syrup thickens and keeps the fruit from spoiling. Under-reduced juice leaves the preserve watery and more prone to spoilage.

Swap the plum

How well each one fits the dish's main ingredients (sugar, vinegar, cinnamon, clove, allspice):

  1. Vanillafits better
  2. Orangefits better
  3. Quincefits about as well

Fit is the average pairing score against sugar, vinegar, cinnamon, clove, allspice. Candidates are from the same food group and used in at least 100 recipes.
