Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the butter and sugar.

  2. Add the molasses and sour milk, mixing well.

  3. Beat in the eggs one at a time.

  4. In a separate bowl, combine the flour, baking soda, nutmeg, cloves, and cinnamon.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Pour the batter into a greased cake pan.

Bake

  1. Bake for 30–40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cake's crumb together as it bakes.
Eggs
Add structure and richness, and help bind the batter as it sets.
Butter
Adds fat for a tender crumb and rich flavor.
Sugar
Sweetens the cake and helps create a tender, lightly browned crust.
Molasses
Adds deep sweetness, dark color, and moisture to the cake.
Baking soda
Reacts with the acidic sour milk and molasses to produce gas that helps the cake rise.

The step that matters

Stir the dry ingredients in gently. Once flour meets liquid, gluten begins to form. Stirring only until combined keeps the cake tender rather than tough and dense.

Swap the clove

How well each one fits the dish's main ingredients (molasses, sugar, butter, milk, egg, nutmeg, cinnamon):

  1. Clovethe original
  2. Allspicefits about as well
  3. Cardamomfits about as well
  4. Gingerfits less well

Fit is the average pairing score against molasses, sugar, butter, milk, egg, nutmeg, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
