Sweet Rolls

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Dissolve the yeast in ¼ cup of tepid water in the evening.

  2. Scald the milk.

  3. Add the butter, lard, 2 tablespoons of sugar, and salt.

  4. Beat in the yeast and 3 cups of flour.

  5. Let rise overnight.

Make the dough

  1. Cream together the egg yolks, remaining sugar, and cinnamon.

  2. Beat the mixture into the sponge.

  3. Add more flour to make a firm dough, about 5 cups.

  4. Knead thoroughly.

  5. Let rise until doubled in bulk.

Shape and bake

  1. Form into small rolls.

  2. Let rise until light.

  3. Bake in a moderate oven at 350°F (175°C) for about 25 minutes.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Royal yeast cake
Ferments the sponge so the dough rises and becomes light.
Egg yolks
Add richness and fat, giving the rolls a tender crumb and golden colour.
Bread flour
Forms the gluten network that gives the dough its structure and chew.
Butter
Adds fat that softens the crumb and adds flavour.
Lard
Adds fat that keeps the crumb tender tender and moist.
Sugar
Feeds the yeast and adds sweetness and browning in the oven.

The step that matters

Let rise until doubled in bulk. Yeast needs enough time to produce gas and stretch the gluten. Under-proofed dough bakes dense, while over-proofed dough can collapse and lose its structure.

Swap the cinnamon

How well each one fits the dish's main ingredients (milk, butter, sugar, egg, bread, flour):

  1. Cinnamonthe original
  2. Nutmegfits about as well
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against milk, butter, sugar, egg, bread, flour. Candidates are from the same food group and used in at least 100 recipes.
