Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the custard and help it set into a firm, sliceable cake.
Bread
Soaks up the milk and eggs to form the body of the pudding.
Evaporated milk
Provides the liquid base and creamy richness of the custard.
Sugar
Sweetens the caramel and browns to form its colour and flavour.
Butter
Adds fat for richness and a tender crumb.
Baking powder
Releases gas in the batter to lift the pudding slightly as it bakes.

The step that matters

Heat the milk gently and stop before it boils. Milk scalds and can form a skin or curdle when it boils hard, and overheating can toughen the eggs once they are mixed in. Stopping just short of a boil keeps the custard smooth.

Swap the clove

How well each one fits the dish's main ingredients (butter, bread, evaporated milk, egg, raisin, cinnamon, sugar):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against butter, bread, evaporated milk, egg, raisin, cinnamon, sugar. Candidates are from the same food group and used in at least 100 recipes.
