Marble Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, beat the egg whites with the white sugar until fluffy.

  3. Soften the butter by the fire and stir it into the mixture.

  4. In a separate bowl, mix the baking soda and cream of tartar into the sweet milk, then combine with the egg mixture.

  5. Sift and stir in 2½ cups of flour until well combined.

  6. For the dark part, beat together the brown sugar, molasses, softened butter, sour milk, baking soda, cream of tartar, and 2½ cups of flour.

  7. Add the egg yolks and spices to the dark mixture and mix well.

  8. In a greased baking dish, drop spoonfuls of the dark batter followed by spoonfuls of the light batter, alternating layers.

  9. Continue layering until the pan is filled.
