Why it works: Nutmeg and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Bread Sponge Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and butter or lard.

  3. Add the baking soda, nutmeg, bread sponge, cinnamon, and flour, mixing well.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Fold the beaten egg whites into the batter just before adding the raisins.

  6. Toss the raisins with 1 cup of flour to coat them, then fold into the batter.

Rise and bake

  1. Pour the batter into a greased pan and let it rise for 1 hour.

  2. Bake for 1 hour or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Adds sweetness and helps the crust brown.
Butter or lard
Fat that creamed with sugar softens the crumb and adds richness.
Baking soda
Releases gas in the batter to help the cake lift.
Bread sponge
Fermented starter that adds flavor and helps the cake rise.
Eggs
Whipped whites trap air that lightens the texture.
Flour
Forms the structure that holds the cake together.

The step that matters

Folding in the beaten egg whites. Folding gently keeps the air trapped in the whites, which lifts the crumb. Stirring hard deflates the foam and leaves a dense, heavy cake.
