What each ingredient does

Bread crumbs
Provide the bulk and body that hold the pudding together.
Suet
Adds fat and richness, keeping the pudding moist during steaming.
Eggs
Bind the mixture and help it set as it cooks.
Baking powder
Releases gas during cooking to lighten the texture.
Sugar
Adds sweetness and helps with browning and flavor.
Raisins
Add concentrated sweetness and chewy texture.

The step that matters

Steam for 3 hours or longer. Steaming gently and for a long time cooks the eggs and starches through evenly and softens the suet. Stopping early leaves the centre dense, wet, or undercooked.

Swap the currant

How well each one fits the dish's main ingredients (bread, egg, raisin, nutmeg, cinnamon, sugar, milk):

  1. Vanillafits better
