Spice Cake

Why it works: Cinnamon and nutmeg match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the brown sugar and butter until smooth.

  3. Add the eggs one at a time, mixing well after each addition.

  4. In a separate bowl, combine the flour, baking soda, cinnamon, nutmeg, and cloves.

  5. Gradually add the dry ingredients to the creamed mixture, alternating with the milk.

  6. Stir in the molasses and raisins until evenly distributed.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Creams with the sugar to give the cake a tender, rich crumb.
Eggs
Add structure and help bind the batter as they set in the oven.
Flour
Provides the main structure that sets as the cake bakes.
Baking soda
Reacts with the batter to produce gas that helps the cake rise.
Brown sugar
Adds sweetness, moisture and a caramel-like flavor to the cake.
Molasses
Adds moisture, deep flavor and extra browning to the cake.

The step that matters

Adding the dry ingredients gradually. Adding flour in portions, alternating with the milk, keeps the batter smooth and emulsified. Overmixing once flour is added develops gluten, which can make the cake tough.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
