Jelly Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix flour, baking powder, sugar, butter, eggs, milk, salt, and flavoring until smooth.

  3. Divide half of the batter into two oblong cake tins.

  4. In the remaining batter, add molasses, raisins, cinnamon, citron, flour, cloves, allspice, and nutmeg.

  5. Pour the dark batter into two tins of the same size and shape.

  6. Layer the light and dark batters alternately in the tins, adding jelly or jam between layers.

  7. For a marble loaf, pour the light and dark batters in alternate layers into one pan, omitting the fruit.
