What each ingredient does
- Eggs
- Bind the mixture and help give the pudding its set structure when steamed.
- Bread crumbs
- Absorb liquid and give the pudding its soft, bulky body.
- Beef suet
- Adds fat that keeps the pudding moist and rich as it steams.
- Castor sugar
- Sweetens the pudding and contributes to its tender texture.
- Ground rice
- Adds a fine, slightly firm texture to the crumb.
- Raisins
- Provide concentrated sweetness and chewy fruit pieces throughout.
The step that matters
Steam for 1 to 1.5 hours. Steaming gently cooks the egg and starch set without drying the pudding. Keep the water boiling steadily and topped up, since a pot that boils dry or is left too hot can scorch the base or leave the centre underset.
