Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stale bread
Soaked in hot milk, it absorbs liquid and forms the soft body of the pudding.
Eggs
Beaten eggs set during baking, binding the pudding and giving it structure.
Milk
Steeped with the bread, it provides moisture and makes the crumb tender.
Butter
Adds fat and richness, contributing to a tender texture and flavour.
Sugar
Adds sweetness and helps browning on the surface during baking.
Currants and raisins
Add sweetness and chewy pockets of fruit throughout the pudding.

The step that matters

Gradually stir in the beaten eggs. Adding eggs slowly to the cooled bread mixture helps them blend evenly, so the eggs do not scramble and the pudding sets smoothly when baked.

Swap the mace

How well each one fits the dish's main ingredients (bread, milk, currant, raisin, nutmeg, cinnamon, sugar):

  1. Allspicefits better
  2. Clovefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against bread, milk, currant, raisin, nutmeg, cinnamon, sugar. Candidates are from the same food group and used in at least 100 recipes.
