Peach Mangoes

Ingredients

Directions

Prepare the peaches

  1. Prepare a brine as directed in the pickled peaches recipe.

  2. Choose fresh peaches, brush them clean, and soak them in cold brine for three days.

  3. Remove peaches from brine, cut a small piece from the top, and remove the stone without enlarging the hole.

Make and stuff

  1. In a bowl, mix brown sugar, onion, garlic, horseradish, mustard seed, cinnamon, cloves, mace, and turmeric. Add enough salad oil to moisten the mixture.

  2. Stuff the peaches with the mixture, close the cut with a piece of peach, and secure it with thread.

Jar and seal

  1. Place the stuffed peaches in glass jars, cover with cold vinegar, add 2 tablespoons of salad oil to each jar, and seal airtight.

What each ingredient does

Peaches
Form the main body of the pickle, absorbing the brine and spiced filling as they soak.
Brown sugar
Adds sweetness that balances the sharp vinegar and horseradish.
Horseradish
Contributes sharp pungency that mellows during the long pickling period.
Mustard seed
Adds a sharp, pungent bite and textural crunch to the filling.
Cold vinegar
Provides acidity that preserves the peaches and gives the pickle its tang.

The step that matters

Soaking the peaches in brine for three days. Brine draws out water and firms the fruit, so the peaches hold their shape and absorb flavor evenly. Skipping or shortening the soak leaves fruit soft and under-seasoned.
