Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the potato base

  1. Roast the potatoes in the ashes until done, then peel them.

  2. In a pan, combine the potatoes with salt, lemon rind, butter or cream, and sugar.

  3. Mash the mixture and rub it through a colander, stirring hard.

  4. Set the mixture aside to cool.

Make the cake

  1. Beat the eggs and gradually stir them into the cooled mixture.

  2. Season with mixed spice and rose-water.

  3. Butter a mold or deep dish and coat the inside with grated bread.

  4. Pour the mixture into the mold and bake at 350°F (175°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy bulk that gives the cake its soft, moist body.
Eggs
Set during baking to bind the mixture and give it a light, custard-like structure.
Butter or cream
Adds fat and richness, softening the texture and carrying flavour.
Sugar
Adds sweetness and contributes to browning on the surface during baking.
Rose-water
Adds a delicate floral aroma to the finished cake.

The step that matters

Let the mixture cool before adding the eggs. Beaten eggs added to a hot mixture can scramble or curdle unevenly. Cooling first lets the eggs blend smoothly and set into an even, tender crumb during baking.

Swap the potato

How well each one fits the dish's main ingredients (lemon, butter, sugar, egg, rose, bread):

  1. Arrowrootfits better
  2. Asparagusfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against lemon, butter, sugar, egg, rose, bread. Candidates are from the same food group and used in at least 100 recipes.
