What each ingredient does

Peaches
Provide the fruit that softens and absorbs the spiced syrup as it stands.
Sugar
Sweetens the syrup and helps preserve the peaches' texture and shape.
Vinegar
Adds acidity that balances the sweetness and helps preserve the fruit.
Cinnamon
Adds warm aromatic flavour that infuses into the syrup and fruit.
Cloves
Adds strong aromatic flavour that infuses into the syrup and fruit.
Allspice
Adds warm aromatic flavour that infuses into the syrup and fruit.

The step that matters

Pour the hot mixture over the peaches a second time. Repeated pouring of hot syrup and reheating softens the fruit and lets spice flavour penetrate. Too little heat or time leaves the peaches firm and under-flavoured, while overboiling can make them mushy.
