The Hermits Bread and Butter Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the rice bread into thin slices and spread with cold butter.

  2. Fit the slices into a tart dish, then remove them.

  3. Pour ¾ inch of thick batter (flavored with sugar and lemon peel) into the bottom of the dish.

  4. Bake in a 400°F (200°C) oven for 3-4 minutes to set the batter.

  5. Layer the bread slices on the batter, then pour thinner batter over to moisten the bread.

  6. Sprinkle a layer of plumped currants, then add another layer of bread and repeat the process.

  7. Fill the dish to within ½ inch of the top with thicker batter.

  8. Bake with water in the tin until firm and light.
