What each ingredient does

Peaches
Provide the fruit that forms the body and flavor of the preserves.
Sugar
Sweetens the preserves and helps thicken them as they cook.
Vinegar
Adds acidity that balances the sweetness and sharpens the fruit flavor.
Cloves
Contribute warm, aromatic spice flavor that infuses the peaches.
Cinnamon
Adds warm, sweet aroma and spice flavor to the preserves.

The step that matters

Repeating the hot syrup over three days. Pouring hot sugar and vinegar over the peaches repeatedly lets the syrup gradually penetrate the fruit and draw out moisture, so the spices and sweetness are absorbed evenly before the final boil.
