Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks add richness and emulsify the batter; whipped whites provide the lift and airy structure.
Powdered almonds
Add body, moisture and nutty flavour, forming a tender crumb.
Bread
Browned bread squares add texture and a toasty flavour to the crumb.
Powdered sugar
Sweetens the batter and helps the yolks become smooth and pale when beaten.

The step that matters

Folding in the beaten egg whites. Stir gently so the air trapped in the stiff whites is kept. Overmixing deflates the foam, leaving a denser cake once baked.

Swap the clove

How well each one fits the dish's main ingredients (egg, sugar, bread, almond, cinnamon, rose):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against egg, sugar, bread, almond, cinnamon, rose. Candidates are from the same food group and used in at least 100 recipes.
