Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix together the sugar, molasses, and butter until well combined.

  3. Add the eggs, sour milk, and a pinch of salt, and mix thoroughly.

  4. Sift the baking soda, flour, cinnamon, nutmeg, and cloves into the mixture and stir until just combined.

Bake

  1. Pour the batter into patty pans or muffin rings.

  2. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Baking soda
Reacts with the acidic sour milk and molasses to give the cake lift.
Flour
Forms the main structure that holds the cake together as it bakes.
Butter
Adds fat for a tender crumb and rich flavor.
Molasses
Adds moisture, dark color, and a deep sweet flavor.
Sour milk
Its acidity activates the baking soda and adds tenderness.

The step that matters

Stirring in the flour mixture. Once the flour is added, overmixing develops gluten and makes the cake tough. Stir only until just combined, and sift the baking soda in with the dry ingredients so it distributes evenly.
