Spice Cake

Why it works: Nutmeg and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar.

  3. Add the eggs, sour milk, and molasses, mixing well.

  4. In another bowl, combine the flour, baking soda, nutmeg, cinnamon, cloves, and salt.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Bake

  1. Pour the batter into patty pans or muffin rings.

  2. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and add richness and tenderness.
Eggs
Bind the batter and add structure as they set in the oven.
Baking soda
Reacts with the sour milk and molasses to lift the cake as it bakes.
Flour
Provides the main structure that sets as the cake bakes.
Molasses
Adds sweetness, dark color, moisture, and depth of flavor.
Sour milk
Its acidity reacts with the baking soda and adds moisture and tenderness.

The step that matters

Stirring the dry ingredients into the wet mixture. Overmixing once the flour is added develops gluten, which makes the cake tough. Stir only until just combined so the crumb stays tender.
