Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread sponge
Ferments and leavens the batter so it rises before baking.
Eggs
Add structure and richness, and the beaten egg glaze gives the top color.
Sugar
Adds sweetness and helps the top brown as it bakes.
Butter
Adds fat for a softer crumb and richer flavor.
Flour
Forms the stiff batter that gives the cake its structure.

The step that matters

Letting the batter rise until it doubles. The bread sponge needs time to ferment and trap gas; under-proofed batter bakes dense, while over-proofed batter can collapse and turn coarse.

Swap the cinnamon

The recipe marks cinnamon as optional. How well each one fits the dish's main ingredients (bread, egg, sugar, butter, flour, almond):

  1. Cinnamonthe original
  2. Nutmegfits about as well
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against bread, egg, sugar, butter, flour, almond. Candidates are from the same food group and used in at least 100 recipes.
