Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Cooks soft and thickens with milk, giving the fritters their body.
Milk
Cooks with the rice to create a soft, moist base for the mixture.
Egg yolks
Brushed on the fritters so the bread crumbs adhere and brown evenly.
Bread crumbs
Form a crisp, golden coating that browns during frying.
Lard
Fries the fritters, browning their coating and adding richness.

The step that matters

Fry the fritters in lard until golden. Frying at a steady heat browns the crumb coating before the inside overheats. Too hot and the crumbs darken or burn while the centre stays cool; too cool and the fritters absorb fat and turn greasy.
