Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the brown sugar, molasses, and butter.

  2. Add the Ewell's X.L. Dairy Bottled Milk, nutmeg, cinnamon, ground cloves, and eggs; mix well.

  3. Gradually add the flour and baking powder, stirring until combined.

  4. Pour the batter into a greased baking pan.

Bake

  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during baking.
Flour
Forms the structure that holds the cake's crumb once baked.
Baking powder
Releases gas in the batter, helping the cake rise and turn light.
Butter
Adds fat for a tender crumb and rich flavor.
Molasses
Adds moisture, dark color, and a deep, slightly bitter sweetness.
Brown sugar
Adds sweetness and moisture, and helps the cake brown and stay soft.

The step that matters

Judging when the cake is done. Baking powder gives lift only while the batter is hot and setting, and an underbaked center can collapse as it cools. Test the center with a toothpick, which should come out clean, before removing the cake from the oven.

Swap the clove

How well each one fits the dish's main ingredients (sugar, molasses, butter, milk, nutmeg, cinnamon, egg):

  1. Clovethe original
  2. Allspicefits about as well
  3. Cardamomfits about as well
  4. Gingerfits less well

Fit is the average pairing score against sugar, molasses, butter, milk, nutmeg, cinnamon, egg. Candidates are from the same food group and used in at least 100 recipes.
